2 1/2 cups water

1 cup pastina

2 large eggs

2 tbsp unsalted butter

1/4 cup grated Parmesan cheese

2 tbsp chopped parsley (optional)

In a medium pot, heat the water to a boil on high. Season with salt. Add the pastina and cook 6 min., until most of the water is absorbed.

In a small bowl, whisk the eggs together. Remove pot from heat and stir in eggs, letting them cook in pastina. Stir in the butter and cheese, then season with pepper. Garnish with the parsley, if desired. Serve immediately.
