> Cooking spray
> 2 (16 oz) bag frozen cut-leaf spinach, thawed
> 1 medium onion, finely chopped
> 4 large eggs
> 1/2 cup (1 stick) unsalted butter, melted
> 1/2 tsp garlic powder
> 1/2 tsp dried thyme
> 1/2 cup shredded Parmesan cheese

Preheat oven to 350°F. Coat a baking sheet with the cooking spray. Microwave the spinach according to package directions. Drain and squeeze out as much excess moisture from spinach as possible.

Transfer half the spinach mixture to a food processor, and pulse 45 sec., until smooth. Return processed mixture to bowl. Stir in the Parmesan and stuffing mix.
Shape mixture into 1½-inch balls and place balls on prepared baking sheet. Bake 30 min., until cooked through.
