Spinach Balls

This easy appetizer uses store-bought stuffing mix as the base. Frozen spinach and other pantry staples make this recipe perfect for any last-minute gathering.

Ingredients

> Cooking spray
> 2 (16 oz) bag frozen cut-leaf spinach, thawed
> 1 medium onion, finely chopped
> 4 large eggs
> 1/2 cup (1 stick) unsalted butter, melted
> 1/2 tsp garlic powder
> 1/2 tsp dried thyme
> 1/2 cup shredded Parmesan cheese
> 1 (12 oz) pkg seasoned stuffing cubes

Preheat oven to 350°F. Coat a baking sheet with the cooking spray. Microwave the spinach according to package directions. Drain and squeeze out as much excess moisture from spinach as possible.

In a large bowl, combine spinach with the onion, eggs, melted butter, garlic powder, and thyme. Season well with salt and pepper. Stir to mix. Transfer half the spinach mixture to a food processor, and pulse 45 sec., until smooth. Return processed mixture to bowl. Stir in the Parmesan and stuffing mix.

Shape mixture into 1½-inch balls and place balls on prepared baking sheet. Bake 30 min., until cooked through.
