Air Fryer Mac and Cheese Bites

These quick and easy air fryer mac and cheese bites are the perfect game day snack. Crispy on the outside and gooey on the inside, they’re sure to please any crowd. To make these kid-friendly, skip the buffalo or sriracha sauce.

Ingredients

> 4 cups store-bought macaroni and cheese
> 1 1/2 tbsp buffalo sauce or sriracha
> 1/4 cup flour
> 4 large eggs
> 2 tbsp milk
> 4 cups cheese crackers, finely crushed
> 4 cups panko bread crumbs
> Cooking spray

To Serve (Optional):

> Ketchup
> Ranch dressing

In a large bowl, mix the mac and cheese, buffalo sauce, and flour until just combined. Scoop mac and cheese into 2-tbsp portions, then roll into balls, or use a 2-tbsp cookie scoop. Transfer to a baking sheet or platter and freeze until just firm, about 15–20 min.

In a medium bowl, whisk the eggs and milk to combine. Season with salt and pepper. In a large resealable plastic bag, combine the cheese crackers and panko bread crumbs. Working in batches, dip mac and cheese balls fully in egg mixture, letting excess drip back into bowl. Transfer to panko mixture and shake bag to coat balls. Transfer to baking sheet and freeze until firm, about 15–20 min.

Preheat air fryer to 360°F. Lightly grease air fryer basket with the cooking spray. In batches, add mac and cheese bites in a single layer, and cook 8–10 min., until balls are lightly browned. Serve with the ketchup and ranch dressing for dipping, if desired.
