1 (14 oz) pkg Nature's Promise® Extra Firm Tofu, drained

3/4 cup all-purpose flour

3 tbsp cornstarch

2 tsp garlic powder
>
2 tsp paprika
>
2 large eggs
>
1 1/2 cups panko bread crumbs

Wrap the tofu in a kitchen towel or paper towels. Place a cast-iron skillet on top and let sit 20 min. to release excess water from tofu. Meanwhile, in a shallow bowl, combine the flour, cornstarch, garlic powder, and paprika. In a second shallow bowl, beat the eggs until smooth. Add the bread crumbs to a third shallow bowl. Season each bowl with salt and pepper.

Preheat oven to 400°F. Line a baking sheet with parchment and coat with the cooking spray. Tear tofu into 1-inch pieces onto a plate. Season with salt and pepper.

Working in batches, dredge tofu pieces first in flour mixture, shaking off excess, then the eggs, and then the bread crumbs. Place tofu on prepared baking sheet. Coat the tops lightly with cooking spray. Bake 20–25 min., flipping halfway through, until golden brown. Serve with desired sauce.
Tips
To make this recipe vegan, swap the eggs for dairy-free milk.
