For the raspberry syrup:
>
3/4 cup granulated sugar
>
2 (6 oz) pkgs raspberries
For the drink:
>
4 tbsp fresh lime juice, to serve
>
Soda water, as needed
Steps
1
In a medium pot, bring ¾ cup water to a boil on high. Add the sugar and heat 1 min., until sugar has dissolved, stirring constantly. Reduce heat to medium-high and add the raspberries. Cook 5–6 min., until berries are soft. Remove pot from heat. Mash berries with the back of a spoon or a potato masher.
2
Using a fine-mesh strainer, strain syrup into a jar. Use the spoon to move the seeds and pulp around to get all the syrup. Let cool completely and keep refrigerated.
3
To serve, fill 2 tall glasses with ice. Add 2–3 tbsp raspberry syrup to each glass (save remaining syrup for more lime rickeys or another use) and divide the lime juice between glasses. Stir to combine. Top off each glass with the soda water.
Tips
You’ll have enough raspberry syrup for 10 glasses of pink lime rickeys.
