Bulgur wheat…in pie? This high-fiber whole grain has a slightly nutty flavor that adds bulk and texture to this almost-instant microwaved treat. To save time, dice the apple and assemble all the remaining ingredients while the bulgur enjoys a fast ten-minute soak.

> 1/4 cup bulgur
> 1/2 cup water
> 3/4 cup diced apple
> 1/2 tsp cinnamon
> 1/2 tsp vanilla extract
> 2 tbsp Greek nonfat plain yogurt
> 2 tbsp chopped walnuts


Soak bulgur in 1/2 cup of water for 10 minutes in a microwave safe bowl. Add diced apple, cinnamon and vanilla extract to the bulgur. Microwave on high for 3 minutes. Serve with Greek yogurt and walnuts on top.
