Roasted Broccoli

With crispy edges, this roasted broccoli is a quick and easy side to any dinner.

> 1 medium head broccoli
> 2 tbsp olive oil


Preheat oven to 425°F. Cut florets off broccoli stem into bite-sized florets. Peel and slice the stalk.
Add broccoli pieces to parchment-lined baking sheet. Toss with the oil and season with salt and pepper. Roast broccoli 14–15 min., until tender.


Flavor combinations:

SESAME-SOY: Before roasting, toss broccoli with 3 sliced garlic cloves. Combine 2 tbsp low-sodium soy sauce, 1 tbsp brown sugar, and 1½ tbsp sesame seeds. Add to roasted broccoli and toss.

LEMON-PARM: After roasting, add 2 tbsp fresh lemon juice, ¼ cup finely grated Parmesan, and ¼ tsp crushed red pepper. Toss to combine.

RAISIN-WALNUT: After roasting, add ¼ cup golden raisins, ⅓ cup chopped toasted walnuts, and a sprinkle of blue cheese crumbles. Toss to combine.
