Ingredients

1 tbsp canola oil

1 1/2 lbs chicken breast, thinly sliced

2 tbsp mint
>
2 tbsp apricot preserves

1 tbsp mustard
>
2 tbsp soy sauce

1/2 cup dried apricots, cut into strips

1 medium onion

1 (12 oz) pkg snow peas

Preheat a large, deep skillet over medium-high heat. Add the canola oil and chicken breast. Brown on each side for about 2 min., or until cooked through. Chop the mint. In a separate bowl, mix together the apricot preserves, mustard, soy sauce, dried apricots, and mint, until well blended.

Remove browned chicken from the pan, transfer to a plate, and set aside. Slice the onion. Add onion and snow peas to the pan, and cook for another 3 min. or until vegetables are tender.

Add the chicken back to the pan. Pour the apricot-mint sauce over top and mix well. Reduce heat to medium and simmer for another 4 min. Serve immediately.
