Avocado-Corn Dip

Sweet corn and creamy yogurt take avocado dip in a different direction from your usual guacamole. Serve as a dip or slathered on a veggie sandwich.

> 3 green onions
> 2 ripe avocados
> 2 tbsp lime juice
> 2 tbsp olive oil
> 1/4 cup nonfat Greek yogurt
> 1 cup fresh or frozen (thawed) corn kernels


Finely chop the green onions. Peel and pit the avocados and add to a medium bowl along with the lime juice, oil, and yogurt. With a fork, mash to combine.
Fold in the corn and green onions. Season with salt and pepper to taste. Serve immediately with flatbread, crackers, or fresh vegetables.
