Avocado-Strawberry Wrap

Berries, avocado, mango, lime and cilantro make this wrap a festival of color and flavor.

Ingredients

> 1 lime
> 8 oz light cream cheese
> 8 oz strawberries
> 2 avocados
> 1 mango
> 1/2 cup unsalted cashews
> 1/2 red bell pepper
> 4 sandwich wraps
> 1/4 cup chopped  cilantro

Steps

Zest and juice the lime. Mix all of the zest and half the lime juice into the cream cheese.

Hull and halve the strawberries and place in a large bowl. Cut the avocados in half lengthwise, remove the pits and scoop out the flesh with a spoon. Dice the flesh and add to the strawberries, along with the remaining lime juice. Peel and dice the mango, coarsely chop the cashews and finely dice the red pepper. Toss together with the strawberries and avocado.

Spread the cream cheese mixture over the wraps and top with the fruit-nut salad. Sprinkle with cilantro. Roll up and serve.

Look for cut up mango in the produce section to save a step.
