Baked Oatmeal with Bananas and Berries

A stint in the oven turns your usual oatmeal breakfast into a hearty casserole loaded with sweet fruit, vanilla, and cinnamon.

> 3 tbsp melted butter, divided
> 1 1/2 cups low-fat milk
> 1 large egg
> 1/4 cup packed light brown sugar
> 1 tsp vanilla extract
> 1 tsp baking powder
> 1/2 tsp cinnamon
> 1/8 tsp salt
> 2 ripe bananas
> 1 1/2 cups Nature's Promise® Organic Quick Rolled Oats
> 1 (10 oz) bag frozen Nature's Promise® Organic Berry Medley, thawed and patted dry


Preheat oven to 375°F. Brush an 8x8-inch baking dish with 1 tbsp butter.
In a medium bowl, whisk together the milk, egg, and remaining 2 tbsp butter. Add the brown sugar, vanilla, baking powder, and cinnamon. Season with salt. Chop the bananas and add to the bowl, along with oats. Stir to combine.
Quarter the strawberries from the berry medley. Arrange half of berries on bottom of greased baking dish. Add oat mixture, spreading in even layer. Top with remaining berries.
Bake 25-30 min., until set. Serve warm.
