3/4 cup butter

1/4 cup whole milk

3 eggs

1/2 cup sugar

1/2 cup almond paste

1 1/3 cups flour

2 tsp baking powder

1 orange

1/4 cup sliced almonds

Melt the butter in a saucepan. Stir in the milk.

Crack the eggs into a bowl and add the sugar. Using a hand mixer, beat for 5 minutes.

Cut the almond paste into small pieces and add to the mixture. Beat for another 1 min.

Mix the flour and baking powder into a bowl. Grate the zest from the orange and add.

Add the butter mixture to the almond-egg mixture and then fold in the flour. Refrigerate for at least 1 hour and no longer than 12 hours.

Preheat the oven to 375° F.

Grease a madeleine tin and fill each cavity with 2 tablespoons of the batter. Sprinkle the batter with almonds.

Bake the madeleines for about 8 min. in the oven, or until golden and domed. Remove from the oven and transfer cookies to a plate. Repeat until batter is gone (you’ll get about 12 batches). Serve immediately.
