> 8 oz large macaroni
> 1 onion
> 1 tbsp olive oil
> ½ lb lean ground beef
> 1 (28 oz) can peeled tomatoes
> 1 (8 oz) pkg fresh spinach
> 1 (8 oz) ball fresh mozzarella
Preheat the oven to 350°F. Cook the pasta according to package directions until al dente, then drain and set aside. Meanwhile, finely chop the onion. Heat the oil in a frying pan and fry the onion for 1 min. Add the beef and cook for 5 min. Add the tomatoes and crush finely with a wooden spoon. Add the spinach bit by bit until all is welted and the liquid has evaporated.
Season with salt (in moderation) and pepper. Meanwhile, cut the mozzarella into pieces. Toss the pasta with the mozzarella and tomato sauce mixture. Spoon into a rectangular-shaped baking dish, then bake for about 20 min. on the middle rack of the oven.
