Balsamic Roast Pears, Pecans, and Blue Cheese Latke Topping

Ingredients

> 2 Bosc pears
> 3 tbsp unsalted butter, melted
> 3 tbsp balsamic vinegar
> 2 tbsp honey
> 1/2 cup chopped pecans
> 1 (4 oz) pkg crumbled blue cheese

Preheat the oven to 400°F. Halve and core the pears. Thinly slice pears lengthwise. In a medium bowl, toss sliced pears, butter, balsamic vinegar, and honey. On a parchment-lined baking sheet, arrange pears in an even layer. Roast 15 min., until tender.

Place a few pear slices on a latke and top with chopped pecans and blue cheese.

Tips

This makes enough to top about 18 latkes.
