Big Apple Pancakes

Ingredients

> 2 cups flour
> 1 cup low-fat milk
> 2 tbsp vegetable oil
> 2 large eggs
> ⅓ cup golden raisins
> 2 tsp ground cinnamon
> 2 Golden Delicious apples
> 2 tbsp butter
> ½ cup confectioners' sugar
> 1 tsp baking powder

Preheat the oven to 200°F. Whisk together the pancake mix with milk and oil. Add the eggs, raisins, and cinnamon and whisk until smooth.

Core the apples and cut into thin slices. Heat ¼ of the butter in a 10-inch skillet over medium heat. When the butter is melted and bubbling, ladle ⅔ cup batter into the pan and tip to form a thin layer. Arrange apple slices on the batter and cook for about 3 min, or until bubbles begin to form.

Flip the pancake using a spatula. Cook for 1 min. more, or until pancake is brown and cooked through. Repeat with remaining batter. Keep pancakes warm in the oven while you finish making the rest. Dust with confectioners' sugar and serve.
