BBQ Chicken Sandwich with Kale and Apple

Fresh, crisp apple and tangy barbecue chicken go together perfectly in this easy weeknight recipe.

Ingredients

> 1 red bell pepper
> 2 tbsp olive oil
> 1 tbsp minced garlic
> 3 cups chopped kale
> 1 tsp smoked paprika
> 1 tbsp hot sauce
> 2 cups shredded rotisserie chicken
> 1/2 cup Nature's Promise Organic Barbecue Sauce
> 1 apple
> 4 sandwich rolls

Seed the pepper and slice into thin strips. In a large skillet, heat the oil on medium-high. Add the garlic and cook 30 sec., stirring. Add the kale, bell pepper, and paprika. Cook 5 min., until kale has wilted. Stir in the hot sauce and season with salt and pepper.

Meanwhile, in a large bowl, toss the chicken with the barbecue sauce. Thinly slice the apple and cut into matchsticks. Split the sandwich rolls and divide kale mixture among the rolls. Top with barbecue chicken and apple. Serve with extra barbecue sauce for dipping.
