Yukon Gold Potato Latkes with Apple-Pear Sauce

Ingredients

> 1 lb Yukon Gold potatoes
> 1/2 medium white onion
> 2 garlic cloves
> 1 egg
> 2 tbsp flour
> 2 tsp fresh thyme leaves, chopped
> 1/2 tsp kosher salt
> 3 tbsp olive oil
> 1/2 cup sour cream

Apple-Pear Sauce:

> 1 McIntosh apple
> 1 red-skinned pear
> 1/4 tsp cinnamon
> 1 tsp honey
> 2 tbsp water

Peel and chop the apple and pear and place in a small sauce pot over medium heat. Add the cinnamon, water and honey. Cook for 10 min or until bubbling. Mash with a potato masher or large fork and set aside.

While apple-pear sauce is cooking, grate the potato and onion with a large holed cheese grater. Peel the garlic and grate on the finer side of the cheese grater or chop finely. Place grated potato, onion and garlic in a clean kitchen towel or cheese cloth. Squeeze all liquid out until very dry. Place in bowl and add the thyme leaves, salt, pepper, egg and flour. Mix well.

Heat the olive oil in a 12 inch sauté pan over medium high heat. Use a ¼ cup measuring cup to scoop out latkes and form into a ball. Add to pan and gently press until ¼ inch thick. Cook for 3-4 min or until golden brown. Flip and repeat.

Serve latkes with pear-applesauce and sour cream.
