1 (16 oz) pkg turkey breakfast sausage

1 tbsp olive oil

1 small onion

5 tbsp unsalted butter, divided

1/3 cup all-purpose flour

3 cups low-fat milk
>
1 1/2 cups shredded sharp Cheddar cheese

1 (25 oz) pkg frozen biscuits

Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish with the cooking spray. Remove the sausage from casings. In a 12-inch skillet, heat the oil on medium-high. Add sausage and the onion. Cook 5–7 min., breaking up sausage into smaller chunks with a wooden spoon, until sausage is cooked through and onion is translucent. Using a slotted spoon, transfer mixture to a bowl.

Add 4 tbsp butter to skillet on low and let melt. Whisk in the flour and cook 1 min., whisking constantly. Gradually add the milk and increase heat to medium. Cook 9–10 min., until mixture thickens and bubbles, whisking constantly. Add the shredded cheese and stir until completely melted. Remove from heat and stir in sausage mixture. Season sausage gravy with salt and pepper.

Transfer sausage gravy to prepared baking dish and top with the biscuits. Bake 30–35 min., until sausage mixture is bubbling and biscuits are golden brown. Microwave remaining 1 tbsp butter until melted. Brush biscuit tops with melted butter and let sit 10 min. before serving.
