Ingredients

4 cups broccoli florets

3 tbsp olive oil

1/4 cup white balsamic vinegar

2 tbsp grainy Dijon mustard

1/4 tsp sugar

1 red bell pepper
>
2 (5 oz) cans solid white albacore tuna

1 (15.5 oz) can white cannellini beans
>
1/2 (5 oz) pkg arugula

To a medium microwave-safe bowl, add the broccoli and ¼ cup water. Cover with vented plastic and microwave 5 min., until stems are tender.

Meanwhile, in a large bowl, whisk together the oil, vinegar, mustard, and sugar. Season with salt and pepper to taste. Seed and thinly slice the bell pepper. Drain the tuna. Drain and rinse the beans.

Drain the broccoli and add to large bowl along with the bell pepper, tuna, and beans. Toss until well combined. Add the arugula and toss. Season with salt and pepper to taste.
