Brussels Sprout Gratin

This grownup take on Brussels sprouts is an elegant addition to the holiday table. If you don’t like blue cheese, cheddar is also good.

Ingredients

> 1 1/2 lbs Brussel sprouts
> 1/4 cup butter
> 1/4 cup flour
> 2 cups 2% milk
> 4 oz crumbled blue cheese
> 1/4 cup sliced almonds

Preheat the oven to 350°F. In a pot of boiling salted water, cook the sprouts for 3 min., drain and put in a greased baking dish.

Melt the butter in a saucepan. Add the flour. Whisk until smooth and then cook on low heat 3 min., stirring regularly. Whisk in the milk and raise heat to medium. Whisk until sauce thickens. Remove from heat

Crumble the cheese into the sauce. Stir until cheese melts and then season to taste with salt (in moderation) and pepper. Pour the sauce over the Brussels sprouts.

Sprinkle gratin with almonds. Bake 25 min., or until golden brown.

Tips

You can make the gratin through Step 3 one day in advance. Store covered in the fridge. Preheat oven to 350°F, sprinkle with almonds and bake until golden brown.
