Ingredients

1 large yellow onion
>
Dash of salt
>
1 tsp cane sugar
>
Canola oil
>
5 sweet peppers
>
3 thyme sprigs (picked off the stems)
>
1 lemon wedge
>
1 tbsp parsley
>
2 Lightlife ® Smart Dogs
>
2 slices Field Roast ™ Chao Slices
>
2 hot dog buns
For the Caramelized Onions:

Peel and remove the core from your onion. Cut onion in half, then cut into ⅛ inch slices. Turn your pan on medium-low, then add onions. Season with salt and cane sugar, and let onions slowly cook for approximately 30 minutes or until carmelized. Toss every 5 minutes and (if they appear dry) add a drizzle of canola oil at the 15 minute mark. At the 20 minute mark, add a tablespoon of water to finish the cooking process.
For the Peppers:

De-seed your peppers and slice them into a small dice. Preheat the pan for 1 minute on medium heat. Once preheated, drizzle enough canola oil to coat the pan. Add the sweet peppers to your pan, season with salt, black pepper and picked thyme. Cook for 5-6 minutes and turn off heat. Add a squeeze of half a lemon and chopped parsley.
For the Lightlife® Smart Dog

Preheat your grill to medium. Once hot, brush the grill with oil. Add Smart Dogs to the grill and let them cook for 4 minutes as you rotate them every 2 minutes. At the 4 minute mark, break a slice of Field Roast® Chao in half and add both halves (lengthwise) on top of the Smart Dog, covering the entire surface. Let it cook for an additional 2 minutes. Toast buns on the grill until golden brown. Top your Smart Dog with the previously prepared peppers and onions.
