Candied Pecans with Cinnamon and Coconut Sugar

Ingredients

> 1 large egg white
> 1 tsp vanilla extract
> 1 (16 oz) pkg pecan halves
> 1 cup coconut sugar
> 1 1/2 tsp ground cinnamon

Preheat oven to 275°F and line a baking sheet with parchment. In a large bowl, whisk together the egg white, vanilla, and 1 tsp water until frothy. Add the pecan halves and toss to coat. In a medium bowl, combine the sugar, cinnamon, and a pinch of salt. Add pecans and toss to coat in sugar mixture.

Transfer pecans to prepared baking sheet. Bake 40–45 min., until crisp, tossing halfway through. Let cool at room temperature (nuts will harden as they cool). Add nuts to an airtight container or jar to gift.

Tips

You can use granulated sugar in place of coconut sugar.
