Ingredients

1/4 cup packed light brown sugar

1 tbsp vanilla extract

4 ripe medium peaches or 4 ripe large plums, washed

1/4 cup (1/2 stick) unsalted butter

Vanilla ice cream, to serve

Preheat oven to 350°F. In a 2-qt baking dish, stir the sugar and vanilla. Sprinkle with a large pinch of salt. Halve the fruit and place cut-side down on top of sugar. Cut the butter into small pieces and arrange on top of fruit.

Bake 25–35 min., until fruit is fork-tender. (Cooking time will depend on ripeness of fruit.) Divide fruit halves among 4 shallow bowls. Top with the ice cream and drizzle with caramel.
