Caramelized Onions

Onions cook down into an almost jam-like consistency that can be topped on burgers, stirred into sour cream for a dip, or combined with beef broth for French onion soup.

> 3 medium yellow onions (2 lbs)
> 2 tbsp canola oil
> 2 tbsp butter


Peel, halve, and thinly slice the onions.
In a 12-inch skillet, heat the oil on medium-high. Add onions, salt, and pepper, and cook 6–8 min., until onions begin to soften.
Add butter and reduce heat to medium-low. Cook onions 35–45 min., until very tender and caramelized, stirring occasionally.
