2 (10 oz) pkgs frozen spinach, thawed

1 (24 oz) container low-fat cottage cheese

3 eggs

1/2 cup milk
>
1 1/2 tsp garlic powder
>
1/4 tsp nutmeg
>
1 cup shredded cheddar cheese

Preheat oven to 425 F

In a large bowl mix together the cottage cheese, eggs, milk, garlic, and nutmeg. Squeeze out as much water as possible from the spinach and add to the bowl. Mix well.

Lightly spray a 9 x 13 inch casserole dish with nonstick spray. Pour in the spinach mixture and top with the shredded cheese. Bake for 25 minutes or until edges are bubbling.
