Chicken Burgers

This is a nutritious and easy meal to make when you have extra chicken breasts and want something new. It only takes a minute to chop the chicken in a food processor, but if you’d rather skip that step, simply substitute 1 lb ground chicken breast.

Ingredients

> 1 onion (chopped)
> 8 oz chicken breast
> 5 tbsp olive oil
> 1 lemon
> 4 hamburger buns
> 4 leaves butter lettuce
> 1 avocado
> 1 cucumber, sliced

Preheat the oven to 400°F. Zest and juice the lemon. In a food processor, grind the onion, lemon zest, chicken breast, 1 tablespoon oil, salt, and pepper, until finely chopped and blended together. Form 4 burgers. Heat 2 tbsp oil in an oven-proof frying pan and add the burgers. Transfer to the oven and bake 10 min., or until tender and cooked through, turning halfway.

Arrange the rolls on a baking sheet and place in the turned-off oven to warm while you finish the recipe. Wash and dry the lettuce leaves. Halve the avocado and remove the pit. Cut the flesh into slices and sprinkle with a little of the lemon juice.

Halve the rolls. Top the bottom half of each roll with a lettuce leaf, some sliced avocado, sliced cucumber, and a burger. Combine the remaining cucumber and avocado in a medium bowl and toss with the remaining 2 tbsp olive oil and the remaining lemon juice.
