Chicken Cordon Bleu

Round out this quick, weeknight-friendly take on an old-school classic with sautéed spinach and mashed potatoes.

> 4 (6 oz) chicken breasts (about 1 1/2 lbs total)
> 4 oz deli ham
> 2 oz sliced Swiss cheese
> 1/4 cup Dijon mustard
> 2/3 cup bread crumbs


Preheat the oven to 400°F. Slice the chicken breasts horizontally ⅔ of the way through, then open and pound to even ½-inch thickness.
Top with the ham.
Place the Swiss cheese on top of the ham. Roll chicken breasts into pinwheels and secure with toothpicks.
Brush each breast with the mustard.
Roll each breast in breadcrumbs to coat. Bake on a wire rack set in a baking sheet 20 min., until golden and chicken is cooked through.
