Ingredients

1 lb boneless, skinless chicken thighs (about 4 small)

1/2 cup Nature's Promise® Organic White Balsamic Vinaigrette

1 small Kirby cucumber

1 cup fat-free Greek yogurt
>
1 tbsp lemon juice
>
2 tbsp olive oil

4 cups small broccoli florets
>
1 (15.9 oz) pkg Nature's Promise® Long-Grain Rice
>
1/2 cup fresh mint
>
Bamboo skewers, soaked

Set grill to medium. Slice the chicken thighs into thin strips. Toss with the vinaigrette, salt, and pepper. Let stand 10 min. Thread the chicken onto skewers. Grill 5 min. per side, until cooked through.

Meanwhile, on a box grater, coarsely grate the cucumber and place in a small bowl, along with the yogurt. Stir in the lemon juice and oil. Season with salt and pepper.

Place the broccoli in a microwave-safe bowl, along with 3 tbsp water. Cover with plastic and microwave 3 min., until tender. Season with salt. Heat the rice in the microwave according to package directions.

Chop the mint. Stir half the chopped mint into yogurt sauce. Stir remaining chopped mint into rice. Serve chicken with rice, broccoli, and yogurt sauce.
