Ingredients

4 boneless, skinless chicken breasts (1 lb total)

1 tbsp crushed garlic

8 large fresh basil leaves

4 Tbsp grated Parmesan cheese

2 tbsp toasted bread crumbs

1/8 tsp ground black pepper

Preheat oven to 375F.

Place each piece of chicken inside a large plastic bag on top of a wooden cutting board. Firmly pound with a flat mallet, inside the bag, until each portion is about 1/4 inch thick.

Rub crushed garlic onto each chicken piece and top each with 1 tablespoon grated Parmesan cheese and 2 basil leaves. Roll or fold chicken over filling.

Combine bread crumbs and pepper. Dip each roll in bread crumb mixture and place in a baking pan lightly coated with non-stick cooking spray.

Bake for 25 minutes or until internal temperature reaches 165F.
