Chocolate Almond Coconut Bars

These chocolate-almond-coconut bars are delicious, rich and can easily be made gluten-free. Almond flour combines with coconut flour, coconut milk and palm sugar to form the base for the shredded coconut that makes them so irresistible. Great as a morning treat or to go with the tea.

> 4 eggs
> 1 cup coconut milk (carton)
> 2 tsp almond extract
> 3/4 cup coconut (palm) sugar
> 1/2 cup almond flour
> 1/2 cup coconut flour
> 1/2 tsp baking soda
> 1/4 cup unsweetened shredded coconut
> 3/4 cup semisweet chocolate chips (dark chocolate or dairy-free)


Preheat oven to 350°F. In a large bowl, whisk together eggs, coconut milk, almond extract and coconut sugar. In another bowl, combine almond flour, coconut flour and baking soda. Mix dry ingredients into wet. Stir in ½ cup chocolate chips.
Pour into an 11 x 7.5-inch baking dish coated with non-stick spray. Pour batter into dish and sprinkle with coconut and remaining chocolate chips. Bake for 35 minutes. Let cool for 1 hour, cut and enjoy!
