Chocolate Almond Drops

These pillowy almond-scented cookies are kept light and moist with the addition of applesauce. A simple drizzled glaze is the perfect decorative element to delegate to the budding baker in the family. Kids will love decorating them almost as much as eating these sweet treats.

Ingredients

> 4 tbsp butter
> 3/4 cup brown sugar, packed
> 1 large egg
> 1/2 cup unsweetened applesauce
> 1 tsp vanilla extract
> 1 1/2 cups all-purpose flour
> 1/3 cup unsweetened cocoa powder
> 1/2 tsp baking powder
> 1/2 tsp baking soda
> 1/4 cup confectioners' sugar
> 1/4 tsp almond extract
> water

Preheat oven to 375°F. Lightly coat cookie sheets with oil or cooking spray. In a large mixing bowl, cream together butter, brown sugar and egg. Blend in applesauce and vanilla. In a medium bowl, sift together flour, cocoa, baking powder and baking soda. Stir dry ingredients into butter mixture. Drop by rounded teaspoonfuls onto cookie sheets. Bake for 8-10 minutes or until cookies spring back when lightly touched.

Transfer cookies to wire rack to cool completely. In a small bowl, combine confectioners' sugar and almond extract. Add water a few drops at a time until consistency is just thin enough to drizzle over cookies.
