Chow Mein with Shrimp

Chow mein is a fried noodle dish from northern China that has become a takeout classic. This homemade version is fast, fresh, and impressive.

Ingredients

> 1 (8 oz) pkg udon noodles
> 4 green onions
> ½ red onion
> 2 tbsp peanut oil
> 1 ½ cups snow peas
> 1 cup sliced mushrooms
> 1 (8 oz) canned bamboo shoots, drained
> ¼ cup lower sodium soy sauce
> 1 (12 oz) bag Nature's Promise® Free From Frozen Raw Large Shrimp peeled and deveined, thawed

Prepare the noodles according to package directions. Place in a colander, rinse with cold water, and drain. Meanwhile, thinly slice the green onions diagonally and set aside. Coarsely chop the red onion.

Heat the oil in a wok or large skillet. Add the snow peas, red onion, and mushrooms. Stir-fry for 3 min. over high heat. Add the bamboo shoots and stir-fry for 1 more min. Add the soy sauce, noodles, and shrimp, and cook for 5 more min. or until shrimp are fully cooked.

Arrange noodles on a large, flat plate and sprinkle with the green onions.
