Cinnamon Raisin French Toast

Fresh fruit puts a sweet twist on this classic breakfast recipe, without adding too much sugar to the mix. An easy morning meal for four, in just 15 minutes.

Ingredients

> 8 slices cinnamon and raisin bread
> 1 cup buttermilk
> 2 tbsp sugar
> 1 tsp vanilla 
> 2 eggs
> 2 tbsp butter
> 1 cup fresh fruit like banana or strawberries, sliced
> 1 cup maple syrup

Steps

Preheat a nonstick skillet over medium heat. Add the butter.

Mix together the buttermilk, eggs, sugar, and vanilla in a medium-sized bowl. Dip the bread into the milk mixture and add to the pan once the butter is melted and bubbling.

Cook for 3–4 minutes per side, or until golden brown. Top with fresh, sliced fruit and a drizzle of maple syrup.
