Ingredients

1 - 8 oz candied red cherries

2 - 4 oz candied citron

1 cup butter, softened

2 cups sugar
>
1 tsp almond extract
>
8 eggs
>
4 cups all-purpose flour
Steps

Preheat oven to 300°F.

Spray 10” tube pan or 2 loaf pans with non-stick cooking spray.

Cream butter, sugar and extract until fluffy.

Add eggs one at a time beating well after each, gradually add flour.

Add fruit (lightly dusted with flour).

Pour into prepared pans.

Bake 2 hours and 20 minutes for tube pan or bake 1 hour and 30 minutes for loaf pans, cake is done when toothpick inserted in middle of cake comes out clean.

Cool in pan.
