Classic Caesar Salad

Homemade Caesar dressing is quick and easy with help from a bit of mayo. Serve this salad as an appetizer or add cooked shrimp or chicken to turn it into a fast and simple dinner or lunch.

Ingredients

> 1 clove garlic
> 2 anchovies, finely chopped, or 1 tsp anchovy paste
> 2 tbsp lemon juice
> 2 tbsp mayonnaise
> 2 tsp Dijon mustard
> 1 tsp Worcestershire sauce
> 2 tbsp olive oil
> 1/4 cup finely grated Parmesan, plus more for garnish
> 3 romaine  hearts
> 1 cup garlic croutons

Into a medium bowl, with garlic press, crush the garlic and add the anchovies. With a fork, mash the anchovies and garlic. Add the lemon juice, mayonnaise, Dijon, and Worcestershire. Whisk to combine. Whisk in the oil, then the Parmesan. Season with salt and pepper to taste.

Trim the romaine hearts and separate the leaves. Arrange one layer of leaves on a large platter. Drizzle with some of dressing. Top with another layer of leaves. Drizzle with more dressing. Lightly crush the croutons and sprinkle on top.
