1 small head red or green cabbage, cored

3 large carrots, peeled

4 green onions, trimmed

3/4 cup mayonnaise

2 tbsp apple cider vinegar

1 tbsp Dijon mustard

1 tbsp sugar

1/2 tsp celery seeds (optional)

Using a sharp knife or mandoline, thinly slice the cabbage to get about 8 cups. Coarsely grate the carrots and thinly slice the green onions.

In a large bowl, whisk together the mayonnaise, vinegar, mustard, sugar, and celery seeds, if using. Season with salt and pepper. Add all the vegetables to bowl and toss to coat. Season with salt and pepper. Cover and refrigerate until ready to serve.
