2 tbsp Dijon mustard

2 tbsp mayonnaise

1 tbsp honey

2 tsp apple cider vinegar

1 1/2 romaine hearts

1/2 pint grape tomatoes

1/2 English cucumber

1 cup shredded carrots

Preheat oven to 400°F. Add the chicken strips to a parchment-lined baking sheet and cook 15–20 min., or according to package directions, until fully cooked.

Meanwhile, in a small bowl, whisk together the mustard, mayonnaise, honey, vinegar, and cayenne, if using. Season with salt and pepper.

Finely chop the romaine, halve the tomatoes, and dice the cucumber. To a large serving bowl, add lettuce, tomatoes, cucumber, and carrots. Season with salt and pepper. Toss with half of the dressing. Slice chicken strips and scatter over salad. Drizzle more dressing over top as desired.
Tips
If desired, cook the chicken strips in an air fryer at 390°F 10–12 min., flipping halfway through.
