Cucumber Slaw

Crunchy and lightly sweet, this easy-to-put-together slaw is nice with barbecued pork or beef, and it goes nicely on tacos or wraps as well. If you want more flavor, let the vegetables marinate in the fridge for several hours before serving.

Ingredients

> 4 cups shredded cucumber
> 1 cup shredded red cabbage
> 1/2 cup shredded Nature's Promise® Carrots
> 1/2 cup cider vinegar
> 2 tbsp sugar
> 1 tsp celery seeds

Steps

Put cucumber and cabbage through a food processor to shred. Add carrots and place vegetables in a colander over and empty bowl to allow excess fluid to drain for about 1 hour. In a measuring cup, combine vinegar, sugar and celery seed. Set aside. Discard drained fluid from vegetables and transfer the vegetables into the empty bowl. Add vinegar mixture and stir. Chill before serving.
