1 1/4 cups walnuts

2 cups pitted dates

1/2 cup sliced almonds

3 tbsp almond butter

2 tbsp coconut oil

1/4 cup sunflower seeds

1 cup unsweetened coconut

To a food processor, add the walnuts, dates, and almonds and pulse until the nuts are broken up and the dates form a sticky paste. Add the almond butter and coconut oil and pulse to combine.

Add the sunflower seeds and ¼ cup of the coconut and pulse until just combined. Using a small ice cream scoop or rounded tablespoon, scoop and roll mixture into 1-inch balls, squeezing to form a tight ball. Place remaining coconut on a plate and roll balls in coconut, pressing to adhere. Place in a sealed container in the refrigerator until ready to eat.
