Deep-Dish Sausage and Spinach Pizza

Chicago-style deep-dish pizza is great for a casual weekend get together with friends.

Ingredients

> 1 lb fresh pizza dough
> 12 oz bulk sausage meat
> 10 oz frozen chopped spinach
> 2 cloves garlic, crushed
> 1 1/2 cups shredded mozzarella 
> 1 1/2 cups pizza sauce
> 6 large fresh basil leaves
> 1/2 cup grated Parmesan

If you have a pizza stone, place it on middle oven rack. Preheat oven to 400°.

In a 9-inch non-stick cake pan or cast iron skillet, press room temperature dough evenly along bottom and up sides of pan. If the dough springs back, leave it for a few minutes to rest and try again.

In a nonstick skillet over high heat, cook sausage meat until brown and crumbly. Add frozen spinach and crushed garlic and cook until all moisture has evaporated.

Using a slotted spoon, transfer sausage mixture into dough-lined pan. Sprinkle over mozzarella and then spread with pizza sauce. Place basil leaves decoratively on top of pizza and sprinkle with parmesan.

Place pan on pizza stone and bake for 40 to 45 min., or until browned and bubbling.

Allow to sit for 10 min. before serving.
