East African Sauteed Collard Greens

Ingredients

> 1 tbsp olive oil
> 1/2 yellow onion, thinly sliced
> 1 (1/2-inch) piece fresh ginger, peeled and minced
> 2 plum tomatoes, seeded and chopped
> 1 lb collard greens, stems removed and thinly sliced

In a large skillet over medium-high heat, heat oil. Add the onions, and cook, stirring occasionally, until tender and lightly browned, about 5 min. Stir in the ginger, and cook until fragrant, about 1 min.

Stir in the tomatoes, and cook until tomatoes release most of their liquid, about 4-5 min.

Add the collard greens and cook, stirring occasionally, until tender, about 8-10 min. Season with salt and pepper. Serve.
