Egglife® Zucchini Hummus Veggie Wrap

Ingredients

> 4 original egglife ® wraps
> 1- 2 carrots, cut into matchsticks
> 1 large bell pepper, cut into matchsticks
> 1- 2 cucumbers, cut into matchsticks
> Alfalfa sprouts, washed well
> Baby spinach

Zucchini Hummus

> 1 1/2 cups chopped raw zucchini
> 1 small clove garlic
> 2 tsp tahini (sesame seed butter)
> 2 tbsp lemon juice
> 2 tbsp olive oil
> 1/2 tsp sea salt

Steps

To make hummus, put all ingredients in a food processor fitted with the “S” blade. Process until smooth and creamy, pausing to scrape down sides with a spatula as necessary.

To make wrap, line half of an egglife wrap with the hummus. Top with veggies. Roll and enjoy!
