> 1/4 cup white wine vinegar
> 3 tbsp Dijon mustard
> 1 tbsp honey
> 1/4 cup olive oil
> 1 medium shallot, very finely chopped
> 1 seedless English cucumber, chopped
> 1 red bell pepper, seeded and thinly sliced
> 1 yellow bell pepper, seeded and thinly sliced
> 1 (12 oz) bag American-blend salad greens
In a medium bowl, whisk together the vinegar, mustard, honey, and oil. Stir in the shallot. Season with salt and pepper to taste. Let stand at least 30 min.
In a large serving bowl, toss the cucumber, bell peppers, and greens. Serve with vinaigrette on the side.
