> 1 (7 -8 lbs) standing rib roast
> 2 tbsp chopped fresh thyme
> 2 tbsp chopped fresh rosemary
> 2 tbsp minced garlic
> 1/4 cup Dijon mustard
> 2 tbsp olive oil
Preheat oven to 450°F and set oven rack to lowest position. Season roast with salt and pepper. Place in a roasting pan, uncovered, with the bones on the bottom. Put in oven and roast for 25 min.
Meanwhile, mix the thyme, rosemary, garlic, mustard, and olive oil until well blended.
Remove roast from oven. Turn the roast upright so the bones are facing up, then brush all over with the mustard mixture.
Lower oven temperature to 400°F and return roast to oven. Roast for an additional 45–55 min., or until an instant read thermometer reads 125–130°F (medium rare). Remove roast from oven and let rest, covered, for 20 min. before serving.
