Flounder with Crouton Topping

Ingredients

> 2 slices whole wheat bread, sliced into 1/4-inch cubes
> 1/4 cup finely chopped onion
> 1 tbsp grated Parmesan cheese
> 1 tsp dried basil
> 1/8 tsp dried thyme
> Dash of cayenne
> 1 lb flounder fillets

Combine bread cubes, onion, Parmesan, basil, thyme and cayenne; set aside.

Lightly coat broiler pan with non-stick spray. Arrange flounder fillets in a single layer on pan. Broil for 4 minutes. Remove pan from oven.

Top fillets with bread mixture. Broil for an additional 5 minutes or until topping is nicely browned, checking occasionally to make sure that it does not burn.
