Fortune Cookies

> 1/4 cup sifted all-purpose flour
> 2 tbsp granulated sugar
> 1 tbsp cornstarch
> 2 tbsp canola oil
> 1 egg white
> 1/4 tsp vanilla extract
> 1/4 tsp almond extract
> 2 tbsp water


Before you begin, type or write messages on small strips of paper for enclosing in cookies.
In a small bowl, stir together flour, sugar and cornstarch. Add oil, egg white and extracts. Stir until mixture is smooth. Add water and mix thoroughly.
Make 1 cookie at a time. Lightly oil a non-stick skillet or crepe pan. Pour 1 tablespoon of batter and spread to a 3 1/2 inch circle. Cook over medium-low heat until edges begin to turn light brown, about 2 minutes. Turn with spatula and cook 2 minutes more. (Use a timer. It's important to cook the entire 4 minutes so that cookies become brittle when cool).
Working quickly, place cookie, smooth surface down, on a paper towel. Put message in center, bring up edges and pinch together using paper towel (cookie will be hot!). Stand the area of the fold over the rim of a bowl and gently pull the points downward, holding edges closed.
Place formed cookie in muffin pan or a small cup to cool. Repeat process for remaining cookies.
