Ingredients

8 oz Nature's Promise® whole-wheat penne

1/2 (16 oz) pkg frozen peas

1 cup silken tofu
>
1 large red onion
>
1 bunch broccolini
>
2 tbsp olive oil
>
2 (5 oz) cans Nature's Promise® tuna in water
>
1/4 cup capers

Cook the penne al dente according to package directions. Add the peas for the last 3 min. Drain pasta and peas and set aside. Mash the silken tofu with a fork or in a blender until smooth and creamy.

While the pasta and peas are cooking, halve the onion and slice thinly. Trim the ends off the broccolini and roughly chop. Heat the oil in a large frying pan over medium heat and sauté onions 4 min. Add broccolini and cook for another 4 min., or until tender crisp. Add the tofu and mix well.

Drain the tuna and capers and add to the onion-broccolini mixture. Simmer 4 min. Add the pasta and peas and toss to thoroughly coat with the sauce.
