No-Bake Peanut Butter and Chocolate Haystacks

Ingredients

> 1 cup butterscotch chips, divided
> 1/2 cup creamy peanut butter
> 2 cups chow mein noodles, divided
> 1/2 cup salted peanuts, divided
> Holiday sprinkles or nonpariels
> 1/2 cup semisweet chocolate chips

Line a baking sheet with parchment. In a medium microwave-safe bowl, combine ½ cup butterscotch chips and the peanut butter. Microwave 1–2 min., stirring every 30 sec., until melted. Stir in 1 cup noodles, ¼ cup peanuts, and a pinch of salt. Drop 1-inch mounds onto prepared baking sheet. Sprinkle the nonpareils on top of stacks.

In a second medium microwave-safe bowl, combine the chocolate chips and remaining ½ cup butterscotch chips. Microwave 1–2 min., stirring every 30 sec., until melted. Stir in remaining 1 cup noodles, remaining ¼ cup peanuts, and a pinch of salt. Drop 1-inch mounds onto prepared baking sheet. Sprinkle holiday nonpareils on top of stacks. Refrigerate all haystacks 15–20 min., until set. Store in an airtight container in the refrigerator for up to 5 days.
