French Bread Pepperoni Pizzas

Slices of salami stand in for pepperoni in these tasty pizzas. Serve for dinner or as a hearty after-school snack.

Ingredients

> 1 loaf French bread
> 2 red bell peppers
> 1 (8 oz) package fresh mozzarella
> 1 cup Nature's Promise® Pizza Sauce
> 2 teaspoons extra virgin olive oil
> 1 tbsp balsamic vinegar

Preheat the oven to 350°F. Cut the bread in 4 equal-sized pieces and then halve each piece lengthwise. Remove the stems from the peppers and cut into thin rings. Slice the mozzarella into 16 thin slices.

Brush the cut side of each piece of bread with 2 tbsp pizza sauce. Top with 2 slices of salami, overlapping slightly and 2 slices mozzarella. Scatter over the pepper rings.

Place the pizzas on a parchment-lined baking tray and bake for 15 min., or until cheese is melted and bubbling.

While the pizzas are baking, place the spring mix in a salad bowl and drizzle with the olive oil and balsamic vinegar. Season with salt (in moderation) and pepper and toss. Serve pizzas with the salad.
