1/3 cup light brown sugar

1/2 tsp apple pie spice

1 1/2 cups Bourbon

2 tbsp lemon juice

4 cups pineapple chunks

In a small saucepan, combine the sugar, spice, and ⅓ cup water. Heat on medium 2 min., until sugar dissolves, stirring occasionally. Remove from heat and stir in the bourbon and lemon juice. Pour mixture into medium bowl.

Stir the pineapple into bourbon mixture and cover with plastic. Freeze until very cold, about 2 hours, stirring every 30 min. for the first hour. Serve with toothpicks.
Tips
Drain bourbon mixture before serving and save for use in cocktails.
